Cooking from the hip again... Tonight, it was white chili.
2 chicken breasts, cut into cubes
2 cups chicken broth
3 fresh jalapenos, diced.
1 medium yellow onion, diced.
3 cans white beans (cannelini)
1 tspn garlic
1/8 cup oregano
1/8 cup crushed red pepper
1 Tbsp white pepper
1 Bay leaf
If you have all of this junk the rest is easy. Put everything in a pot, and cook on medium until the chicken is cooked, then turn the heat down and let simmer until jalapenos soften.
It's kind of hot. I'm not a good person to ask if it's hot though. I eat things really hot. I didn't think it was anything special in terms of how spicy it was. My roommate said it was hot, he said: "It's hot. Not practical joke hot, but hot."

@Diest TKO,
Put shredded Monterrey Jack cheese on top to drive the ladies wild.

Oh yeah, this should make 6 servings.
@Diest TKO,
Would Pepper Jack instead of Monterrey Jack be too redundant?
@tsarstepan,
Never. Also, I need to eat it out of a bowl shaped like a pepper on fire with utensils that look like peppers.

Have I ever told you I love you?? Because I do! Sounds like the perfect storm of pepper on pepper action!
@ossobuco,
Oh, wait, I might have zoomed in wrongly.

If I'm not crying and my nose isn't running, the food isn't spicy enough. I've got a spice fetish and a spice-on for peppers.
