What is the easiest, but more complete software to use for data analysis (ANOVA, simple and multiple regression (backward, stepwise, etc), regression equations, modelling, plotting, etc).
Is there any simple user's guide to learn how to handle data in the software tables, and how to carry out the analysis, and how to understand (learn) the analysis outputs. I know that SPSS is usual, but it is too heavy, and its user's guide is not not easy to handle.

It depends on your general application. There are smaller programs that are geared towards particular fields of study, such as behavioral sciences, medical sciences, etc...

One fairly easy to use, fairly comprehensive shrink-wrapped package (meaning you don't have to pay an annual license fee) is SAS JMP.
