can you make a "choose-your-own-ending" dvd?

In books, sometimes they have options where it says "Go to page 23 if you want Luke to fight Darth Vader or go to page 56 if you want him to run away..."

Could you do that with a simple home made movie? Is there a program to do it so that you could make it into a DVD and use the remote control to select the different options?

Yes, some versions of Windows even come with free software to do so:
