When someone asks, "What color are your eyes?" he should really be asking "What color are your irises?" because it is the iris that contains the pigment that determines the color of your eyes. Despite the fascination eye color holds for us, the genes responsible for it in humans are not well-known and are more complex than most people think.
Iris Structure
The iris is the most visible portion of the uveal tract, which is the middle compartment of the eye. The iris is made up of blood vessels and connective tissue, in addition to melanocytes and other pigmented cells that are responsible for its distinctive color.
I think I read somewhere that the iris either dilates or contracts, I can't remember which, in moments of excitement but I have found that in moments of high excitement the eyes are white as the eyeball revolves in a different orbit and exposing a usually hidden part.

@sozobe,
Your's seem to have a tinge of brown. Is that unusual?
The picture I posted is of my daughter's eyes, not mine -- yes, hers have pretty much every color in them and are very changeable. They don't usually look that green. They can look hazel, blue, gray, or green.

The only time I remember anybody commenting on my eyes was when someone said they looked like two piss-holes in the snow. I think it was one Sunday morning after Mass. After Rough Quest won the Grand National.
