I have no idea -- don't use Outlook, just don't want you be lonely.
Generic answer -- if you want to use the list for more than a single event you could set up a group and put everyone into the group. I don't know if Outlook has a way to do that without hand picking each member of the group the first time through.

I yanked them out of a VERY messed up Quickbooks file, that the company has been trying to use as a database (). Currently, they're sitting in Excel, where I cleaned them up as much as I could, visually.

I didn't try it but it looks like you could succeed.
Go to file, import/export, import from another program/file, select format (excel), browse file to import, =>follow the assistant.
I think it would work.
