Why does the defending team have to demonstrate clear possession of a fumble prior to going out of bounds or the offense keeps the ball, except for when the offense fumbles the ball through the end Zone? Explain change of possession on this play.

I interpret the reasoning thusly:

End zones are the territories of the respective teams. The hundred yards between the end zones are "disputed territory."

A ball not in possession of either team which goes out of bounds in the end zone is considered to have been recovered by the team "owning" that end zone. This is true whether the not-in-possession ball arrived via fumble, kickoff, or punt.
