The lady Diane prefers balsamic,
I prefer rice-wine.
I think we should compromise but just getting some good wine before it turns to vinegar.
You know me, I've got about ten kinds of vinegars...

Turns out that old wine is not quite the same as good vinegar. I found this out when checking out my then enthusiastic idea of putting up vinegars in nice bottles. Back with some links on that.
In the meantime, different vinegars go with different dishes... a good balsamic sprinkled over just out of oven roast chicken slices is wonderful. I bet it's good on roast beef and other meats too.

A minor digression, here. Big 5 Sporting goods has a spray on pain reliever. The literature (propaganda) says that one of the special ingredients is a distallate of wine. Sounds foxey, right? Sounds like alcohol.

well I don't equate good with the price, I have a case of a very nice and also cheap Chilean wine. We will be uncorking tomorrow with our burgers and such. "Casillero Diablo"

Still. Some like different viegars. Some may avoid it and use only lemon juice. Some may hate salad.
Hell, a really aged balsamic is even good on pancakes
I bet balsamic could go wonders for Velveeta.
