Try Patel Brothers in Cary , they have the nan in the F\freezer or in the fridge and everythingelse you will need for your adventure in indian cooking.

Palak is specifically Spinach, Saag means leafy veg can be mustard greens etc. but in resturants you will find saag to be mostly spinach kind or palak.

The cheese is a Ricotta type home made chees pressed in a cheese cloth to remove the excess water and the cubed. and the Saag or Palak is spinach chopped and blended in a food processer after cooking. sometimes a bit of milk or cream is added to give it a more richer taste.

I should try to make that cheese myself sometime, just as I could try to make my own ricotta. I do like both of them.

i made it once, osso. it was easy. involved milk and lemon as i recall (among other things), it was cool to watch.
