What is a tempering valve?

A tempering valve adjusts the mix of cold and hot water so that the hot water coming out of the tap won't scald a person. While you can adjust the mix yourself without the valve (if it's a single spout) it's much safer to have all the domestic hot water at a sub-scalding temperature, around 120º.
