Poutine is a French-Canadian concoction comprised of french fries, gravy, and cheese curds.

I was going to say that if you looked it up you'd find that it's french fries with gravy and cheese, but the poutines I grew up with are made with grated potatoes and salted pork. You need to first cut up the pork in small cubes and soak them overnight. Then you need to grate a bunch of potatoes like you would when making potato pancakes. Then you have to put the grated potato in a cloth and ring out the liquid. Before yopu grate the potatoes you first need to boil and mash a pot of cut up potatoes. You take some of the grated potatoes after you ring them out in the cloth and add some of the mashed potatoes with it and form a ball about the size of a med snowball. You press a hole in the ball with 2 fingers and fill it with some of the pork. Then you press the potato together over the pork and roll the ball around in your hands to make sure the ball is smooth. You then wrap the ball in cheesecloth which prevents it from falling apart while cooking. You put them in a large pot of boiling water for about 3 hours. There are tricks to making these and some people have given up on trying. I grew up with these, so my mother and I make them a few times a year. It's really a job to make these and if you're making a big batch, you really need 2 people because you need to work fast so the grated potatoes won't get brown on you. When they're done you put some brown sugar on your plate and dip every forkfull into the sugar before you eat it. You don't have to do the sugar, but most people eat them that way.
