Which of the following sentences is correct?

1) It is very unusual to use THIS many adjectives in a string.

2) It is very unusual to use THESE many adjectives in a string.

Also, where, on the Internet, can I find information about the kind of grammatical structure above?

1) is correct.

to use these in sentence, you could say:

It is very unusual to use all of THESE adjectives in a string.

i'm not sure where you can find information on that... maybe someone else has a good grammar website they like to refer to...

Google "that many or these many" without the quotes.
