I have my standard FB page that all my friends and family can see, of course. I also have a couple sub-pages. One of them is a page I may use if I decide to run for office in my small community. Can my friends and family see the sub-pages I've created? If so, how can I keep them separate?

Those are just called pages. Your 'standard FB page' is called your profile.
Pages can have privacy settings - set your page as private or secret (as I recall, although that might just be for groups now that I think about it). So pull down on gear wheels and start experimenting. And, only proactively invite people to like those pages; don't just tell FB to invite everyone on your friends list.
