how would you apply gravity data to map a known mineral deposite

Try applying 'electric-universe' principles - Gravitons don't exist.

there are several dozen example programs and texts that list and demonstrate the response pattern of gravity cceleration (in mGal) v distance. Remember the various corrections you need for grvity cceleration or micro-gravity
Terrain corrections
Bouguer corrections
free air corrections
latitude corrections
all to do a deviation from standard gravity.

what kind instruments are you using?
a hint for field students in geophys (gravity, magnetics, sp/R)You should put in your memory (or store on your phone) a range of "shapes" that the anomalies, vs (x or Z) distance grphs look like for a dipping high density bed, a slab, a sightly dipping layer , a LARGE rounded body. etc etc.
