What's the difference between a "Jewish extremist" vs a "terrorist"?

The former is not a terrorist because calling a Jew a terrorist will make you antisemitic. Calling a Palestinian a terrorist makes you a patriot. Even if the Jew is a child killer, you can't call them that -- they are sacred; they are "God's chosen people".

It seems to me that Nationalists of any country are generally referred to as "extremists" rather than terrorists. The term "Islamic extremist" is also used quite a bit.

I think you might be stretching a bit for this point.
