Does anyone know the answer to this? I noticed on Facebook messanger through an old conversation that a person who had previously blocked me, was now showing up with a profile picture. The name still read 'facebook user' and I couldn't view the profile but the picture was now showing rather than the standard generic facebook picture. Anyone else who has blocked me or I have blocked (it's not many honest lol) still don't have a profile picture show up.
Any idea why this is?

They may have added a new profile image since you blocked them. I doubt it means that much.

I was under the assumption I had been unblocked then re blocked again but just wanted to clarify.

That's not outside the realm of possibility, but it kinda doesn't matter. If you're blocked, you're blocked.
