The most recent do seem to stay on top, yes.

You can test this by liking, say, 5 new things and then giving it a month (yes, really; you want to account for any unknown variables in the Facebook algorithm) and seeing if those 5 stay at the top. Make sure not to like anything new. You are talking about liking pages, right, and not posts? Because posts are definitely in chrono order.
