instigated my checking the container of "yogurt" two different times to make sure that I am getting the American spelling correct

Jovially, often explains why we English spell yoghurt: the original Turkish spelling is yogurt, with a circumflex over the g. We transcribe Turkish words with this circumflex as 'gh,' because Turkish words with g on their own usually sound like the j in measure.

Lo, we pronounce it with the hard G in garden: that's why it is gh.
