I planted on cucumber plant this year and that thing went nuts! I've never seen so many cucumbers. I've got 4 in the fridge and about 9 more on the plant that will be ready over the next few weeks.
I usually just like them with a little lemon juice and cayenne pepper but I don't want it for every meal.
I mixed some with sour cream to top some steak sandwiches the other day and that was good.
I've sliced some up and thrown them in with my jalapenos.
I've made tabbouleh.
Any ideas on what to do with all these cucumbers?

sliced or diced cucumbers and tomatoes with sweet white onion, basil or oregano (preferably fresh), balsamic vinegar and extra virgin olive oil. You can add fresh mozzarella too.

Cucumber water is delicious and healthy!
Asparagus and cucumbers go well together with a vinaigrette.
Fresh pineapple and cucumber go together in a light salad and vinaigrette.
Juice a cucumber and add some honey, salt and lime juice. Blend with ice cubes to make a smoothie.
There's always a pickle recipe waiting for a crop of fresh cucumbers.
Make a cucumber, onion, tomato and pepper salsa and serve it with salmon.
Make a cucumber dressing for a dinner salad using lots of fresh dill or mint, yogurt and lemon juice.
Cut slices to use as a soothing refresher for your eyes while you take a nap.

I make something kind of like that but I haven't added cucumbers. Which is silly of me, since I have a crazy plant.
I was just reading about winter gardens and one of the suggestions was for Walla Walla sweet onions. I'm going to try to find some sets....

I might just try that cucumber face wash! Ever since we came back from Texas my skin has been really oily. My usual products have been making my skin break out. Break outs at 50+ are a nightmare!

This sounds divine! We have salmon at least once a week. I have fresh onions, tomatoes and peppers too!

Ingredients:
1 seedless cucumber (long and skinny, slightly bumpy), or 2 American cucumbers

1 small red onion, sliced and broken into rings (optional)
3 tablespoons chopped fresh dill, (leaves from 1 lg. stalk) (optional)
Preparation:
Wash the cucumber(s). If you have unwaxed, seedless cucumbers you can leave part or all of the skin on in strips (attractive when sliced), all others should be peeled. Using a mandoline, a food processor with the thin slicer attachment, or the slicer opening on a cheese grater, slice the cucumber very thin.
Place the vinegar, sugar, salt, and pepper in a serving bowl and whisk until the sugar dissolves completely. Add the cucumber, onion, and dill, if using, and toss well. Marinate for 5 or more minutes and serve.
this may seem like a weird question - but aren't you going to make any kind of pickles?

That salsa does sound good. I think it would go with most any fish.
I'd be making refrigerator pickles myself, but I suppose you can only make so many.

I'm not making any pickles because I'm not a huge pickle fan anymore. I used to really love pickles and pickled things. These days I like "hamburger chips" and pickled jalapenos but that's about it.

I bought Mr. B a juicer last summer but it's been sitting idle since then.
I think I need to drag it out and make him give it another go.
