I read the Guardian and all its foofoo, which I somewhat get.

Anyway, there's a recent article on burgers.

I' ve been reading along - this gives me a more global view than from west Los Angeles.

The article brings a wave of my hand, but I like delving into the comments section.

This part, they got right.

I do not understand why they bring up terms like "pink", and "20% fat.

By the way, real burgers have all garnishments on top, unlike the creation they chose as an illustration.

The comments include many points of view. I suppose I'd place yours into a classic fear of pink mode of some past years, newly correct because of manufactured patties.

But, there's more.

It would never never occur to me to place a slice of beetroot atop a burger.

I'm aghast that I can't get a medium rare burger (I prefer rare in good places) here in any of the cheap **** restaurants in Albuquerque.

Liabilty rules.

Take a good piece of beef and grind it yourself and you'll be ok.

I'm so sorry I tossed my aunt's meat grinder.
