I prefer Crystal -- available on most restaurant tables in New Orleans.

I put it on jambalaya, cheesy shrimp and grits, etouffee, omelettes, red beans and rice, meaty white beans (turkey or pork), and po-boys Wink

@JPB,
Haven't seen that one, but will look for it. Mr.Irish puts Tabasco on just about everything, too. He loves it so much, I thought about getting him a gift from the "Hot Sauce-of-the-Month" club LOL.

@Irishk,
Crystal is mostly just salt vinegarand unfermented pepper. TAbasco has depth and complexity.

@farmerman,
I find it less vinegary than Tabasco. Mr B uses both. He has certain foods that get Tabasco but uses Crystal on cajun/creole plates.

I don't think I've ever seen him eat a bowl of soup without splashing Tabasco into it.

That's how he sees it, too. Our pantry is littered with various half-used bottles of hot sauce, but he always reaches for the Tabasco.

Here's a question for everyone: Do you store your Tabasco in the fridge or pantry?

Pantry.

In the cupboard over the microwave to be precise.

I store mine on the table but my wife keeps moving it to the cabinet.

@farmerman,
while there is always Tabasco in my kitchen, my personal favorite is Cholula manufactured in Chapala, Jalisco, Mexico.

My father was also a big Tabasco fan.

He put it into his homemade spaghetti sauce, which is why I preferred my mother's sauce to his.

@dyslexia,
We keep ours at room temperature, as well. Also have a supply of those tiny, miniature bottles...perfect for traveling. Never leave home without it lol.

Purported to be 'authentic' mexican hot sauce, Cholula is a fave in many Tex-mex restaurants. I don't care for it much personally, though it does have a nice heat to it.
