My great granddad was born in Italy, as was my great grandmother-consequently my granddad is essentially italian-will I be able to get an Italian passport ?-if so, how?

Contact the nearest Italian consulate or the Italian Embassy in the country where you live.
Assuming you're an American, you should probably check with the INS too, since my understanding is that the US takes a dim view of people having two or more passports.
