...But I am resurrecting my sandwich maker. Not for sandwiches really but for hopefully some other easy,fast meals.

Any suggestions on what kind of things I can make for myself in the sandwich maker that are healthy?

The machine also has a press grill plate so I can make paninis and such.

the grill plate will let you make grilled chicken and fish really easily - sliced beef grills up nicely as well

I've got some boneless, skinless chicken thighs marinating at home - they're going to go on the grill tonight - will be done in about 5 - 7 minutes

Since I loved grilled meat on salads, little indoor grills are just about my favourite appliances. So grilled chicken salad, fish tacos, chicken/fish/beef fajitas ...

They're great little tools.

All I can think of right now is how good a thick rueben sandwich with lotsa kraut would be. Is that healthy?

@George,
turkey sausage and/or veggie omelettes

you can cook the sausage and veggies in the little wells first, just pour the egg over for the final cooking time
