If you look at the beginning of this game, the rules state:
Someone starts with a word. The next word needs to relate to the previous one, but it must start with the LAST letter of the previous word.

The rules were changed about a year and a half ago, when it became boring to have E N and S occurring so often, hence the middle letters being used. The Pen is completely correct to jump from EPONGE to PUMICE, and that is how we get from nuance to nuance. The Neverending A to Z of Whatever is more like what you are attempting to play, it seems.
