This is a cryptic type of question rather than a literal one!

At two annual conferences, some interesting conversations could be observed. At one conference, former presidents Ike and LBJ were discussing with some loyal nationalists which of three types of steed they preferred. At the other, some religious worthies, past and present, were considering three birds and which cats could catch them. What were the conferences?

It's about American football.

Once I realized 'religious worthies' were saints, it hit me.

This year, the NFL playoff schedule is going as follows:
Wild-card round
Saturday, Jan. 4
Bills 19, Texans 22 (OT)
Titans 20, Patriots 13

Sunday, Jan. 5
Vikings 26, Saints 20 (OT)
Seahawks 17, Eagles 9

Divisional round
Saturday, Jan. 11
Vikings 10, 49ers 27
Titans 28, Ravens 12

Sunday, Jan. 12
Texans 31, Chiefs 51
Seahawks 23, Packers 28

NFC Championship: Packers at 49ers
Date: Sunday, Jan. 19, 2020

AFC Championship: Titans at Chiefs
Date: Sunday, Jan. 19, 2020

Ike = might be the Kansas City Chiefs (IIRC, he was a Kansan)
LBJ = possibly the Houston Texans
Loyal nationalists = the New England Patriots
3 types of steed = possibly the Buffalo Bills, Tennessee Titans, and the Green Bay Packers?

Religious worthies = the New Orleans Saints
3 birds = the Philadelphia Eagles, the Baltimore Ravens, and the Seattle Seahawks
cats = might refer to people, so that could be the KC Chiefs again, the 49ers, and the Packers

The 2 conferences are the AFC (American Football Conference) and the NFC (the National Football Conference), in that order.
