I like Brubeck for "cool" jazz because of Paul Desmond's sound on the sax...so laid back it's soporific.
Here's a trio of cool pianists you might have missed.

Mose Allison- Finally recognized as Mr. Cool for his wry lyrics and dry humour, Mose plays a percussive bluesy style of piano that's firmly rooted in the blues.

Super! He's been backing up Tony Bennett for decades. No one plays behind the singer better except Tommy Flanagan who played piano for Ella for years.
