Should I use the simple past/past simple or the present perfect with expressions such as "in the past few days" and "in the last few days"?

You could use either present perfect or simple past. It all depends on what you're trying to say.

In the last few days I've stayed in NYC, I went to Central Park and Tiffany's, and saw a show on Broadway.

You could replace I've stayed with its simple past counterpart "I stayed" which might imply you're no longer in NYC.
