In Google Chrome it lets me read articles on newspaper sites which have decided I have read my quota of stories for the month.

Yeah... that isn't privacy. That just means the newspaper software is using cookies, rather than your IP.

Incognito mode does not ensure very much privacy. If you are trusting it, I strongly recommend you understand what it actually does...which isn't much.

Incognito mode doesn't prevent a website from seeing you ip or knowing your location. It doesn't stop people from tracking your search history or knowing what sites you visit.
