1.The number and diversity of British newspaper (is) considerable.
Why "is" not "are"?
2.Rewrite the following using be-subjunctive:
Let it be understood that both sides are willing to reach an agreement.
3.Put the verbs in brackets into the proper subjunctive form:
If I __(feel)overtired, I wouldn't go on.
__(be) that as it may, our expenditure is bound to increase.
__(be) a serious crisis to arise, the government would have to act swiftly.

It should be 'newspapers' in the first sentence.

Don't know why the word is "newspaper" not "newspapers" in my textbook.

Sounds reasonable. But in what case should I consider some phrase as a "unit"?
