mame :
here is a recipe for "gruene sosse" (green sauce - referring to all the 'greens' going into it). my mother-in-law used to make it - she came from eastern prussia.

Grüne Soße
Zutaten
Kräutermischung
Schnittlauch
Kerbel
Kresse
Pimpinelle
Sauerampfer
Borretsch
Dill
Estragon
Zitronenmelisse
Petersilie (glatt oder/und kraus)
Masse
3 Becher Schmand
2 Becher Joghurt
1-2 El. Senf
etwas Zitronensaft
Salz, Pfeffer

mame : do you know what "schmand" is ?
it is "saure sahne" or sourcream with HIGH fat content - essential in original "eastern-prussian style" cooking. of course, that was before anyone knew what cholestorol was - mrs h uses LOW fat sourcream - it's o.k. but not quite the way her mother cooked our meals. mother-in-law lived well into her 80's, so the the "schmand" can't have done much harm.
