Hello everyone. In my email i wrote: ''I will not be here since 14th of August untill 7th of September''. But then i felt i made some mistakes. therefore i would like to ask you some questions:
1) Should i have said 14 of September without using "th"?
2) Should i have used till instead of until?
3) Is it also correct to say ''till/until September the 7th''?
which part of English grammar is responsible for this, i mean what to type in google in order to get results that i need and study this topic better?

The manner in which dates are written is a matter of custom. I believe that in British usage, your constructio of 14 September is considered acceptable. An American would be more likely to write "September 14th," or just "September 14." There is nothing wrong with using until. However, you should not use "since."
I will not be here from the 14th of August until the 7th of September.
That would be in the customary American style of writing dates. I believe that in British usage, it would be written:
I will not be here from 14 August until 7 September.
Please note that although until is not incorrect, most native speakers would use "to."
I will not be here from the 14th of August to the 7th of September.
(American usage)
I will not be here from 14 August to 7 September.
(British usage)
