Are these parents bigots or haters? Do they have a legitimate complaint? Is the school curriculum distorting history and marginalizing other religions?

They sure are. If Islam is to be studied it should all be studied and that is not going on here. Regardless of the myths Islam accomplished zero and was and is an imperialist ideology that conquered with violence and little mercy.

They(Islam) are responsible for the biggest genocides in history. These parents are informed and wish to inform others of the truth about Islam. It is a huge public service that they are doing.

There are some controversial bits in the Koran, so as long as they're taught to schoolkids it'll give kids a better understanding of Islam. For example-

[Koran 17.33]- "..do not kill any one whom Allah has forbidden, except for a just cause"
[Koran 9.123]- "..fight those of the unbelievers who are near to you and let them find in you hardness; and know that Allah is with those who guard against evil"
[Koran 5.38]- "And as for the man who steals and the woman who steals, cut off their hands as a punishment"
[Koran 5.51]- "..do not take the Jews and the Christians for friends"

That aint going to happen. Islam is whitewashed. And the true message of obligations put on the Muslim by their prophet to spread and make Islam dominate by any means will be hidden.
