Pumpkin Cake recipe

Desserts have endless varieties; therefore there are endless recipes too. We often like to use a variety of ingredients to try out new cake recipes; similar is the pumpkin cake recipe. It is not a recent invention but you will always find some alterations or addition of different ingredients. The pumpkin cake is popular worldwide and with the excitement of the Halloween this autumn vegetable is very popular. You will find them used everywhere, as a part of decoration on Halloween; it is used to make extensive recipes like cookies, cakes, and much more. One can make eggless or cakes with eggs for the day and also otherwise for your family and friends. Let us try out an eggless recipe first and how it is modified with eggs also.
Ingredients:
1. 2-cups all-purpose flour
2. 100gm. Softened butter
3. 1 tsp. Baking powder
4. 1tsp. baking soda
5. Vanilla essence 1-2tsp. since the quantity of all the ingredients is large
6. Milk 1 cup, you can use it more or less to make the batter of right consistency
7. ½ cup curd,
8. Sugar 1 cup
9. And finally 1 cup pumpkin , grated

Method:
1. Keep the oven ready by preheating it, and greasing of the tin should be done, so that you are ready to pour the batter immediately after mixing all the ingredients together.
2. The oven is preheated tsp. 180 degrees C. and the cake is also baked at the same temperature.
3. Whisk butter, sugar and vanilla essence together till light and fluffy.
4. Milk and curd are blended well.
5. At the same time sift flour, baking powder and baking soda together.
6. Mix all the ingredients in a larger bowl along with the pumpkin.
7. This makes a larger cake, so we may need a larger baking tin or tray.
8. Bake as usual for 25-30 minutes, until your cake is done.
9. You can adorn the cake with nuts, if you desire. Slice and serve when cooled.

For a cake with eggs add 2-eggs, make variation with cinnamon, nutmeg for aroma, rest of the ingredients remain the same, but do not include curd. Follow similar procedure as above.
