mmmm now Valrhona is a chocolate that really does the trick!
For baking, I mainly use Callebaut, but do keep Valrohna for "personal use" and special occasions. Depending on how much I'm getting paid, I will use Valrhona couverture for desserts, but it is about double the price of Callebaut, another fine chocolate, but not as fine...
Well, I usually suffice with cheaper chocies. I like seattle chocolate (pike place?) and ghiradelli's is ok, too. Whole foods has a nice selection of (very expensive) chocies.
personally, I'm a vanilla kinda guy, bland but true.
Lindt has always been a good middle-priced chocolate for the quality. I use their products as well.

Dark lindt is also a keeper. And the dark toblerone are pretty tasty too.
