"six foot one inch" is technically correct, but "inch" is implied.

so if you say "six foot one", it will be understood that you mean 6'1"...

Not too sure about that. I think when referring to a measurement of distance (or height) it is quite correct to say "foot".

Six feet could be 0,06 of a centipede's pedal extremities.
