I've been to many but not all possible churches in Rome, by a long shot. I don't remember people just touristing badly when I was there, but I've never been there in summer. I'm a mad mix of nostalgic, angry (lessening over time), and architecture etc. interested. I behave as I did when I was nine, quiet and respectful. The only place I remember as a zoo was St. Peter's, each time I popped in. I preferred the Pantheon, but that's a church too (don't get me started).
That particular church, St. Philip Neri, should have appropriate drink disposal facilities outside the church, a simple design maneuver. It is routine in summer that people would need to be drinking water, et al.
Hats, I don't care. Men took off their hats, women wore mantillas, around the time I left all that. But house rules rule.
