My absolute favorite is the Ramones covering Sonny and Cher's "Needles and Pins"! I love love love that.
And the Judas Priest redo of Joan Biaz's "Diamonds and Rust". Brilliant. (With thanks to bi-polar bear for sending me in the direction to even hear it.)
Okay, one more (for now)....
I have this amazing CD called "Lounge Against the Machine" where the singer does lounge versions of songs like "Closer To God" and "Holiday in Cambodia". Brilliant! The best thing about it is that it is done so seriously -- not JUST camp -- but really paying respect to the songs.
On a more personal note, Mo and my version of Aerosmith's "Walk This Way" toatlly rocks.

Huh. Somebody did a bluegrass cover of Dark Side of the Moon. "The lunatic is on the grass" (or whatever the lyric is) goes over quite well...
I agree with boomer on this one. I crack up at Richard Cheese's cover songs. I also like his opposite Weird Al (changes lyrics, not music).
I also have a soft spot for Ozzy's rendition of Stayin' Alive.
Muddy Waters turning the tables with his electric version of the Stones "Let's Spend the Night Together".
