I often read reviews which say something like: 'Lunar Park by Easton Ellis is a book' Thus implying his surname is Easton Ellis. However, on his website I've read his father's name is Robert Ellis; meaning his surname is Ellis.
What is it?
Does anyone know?
I don't know offhand, but it seems like what you found about his father offers the information you need to know. That his last name is Ellis, and Easton is his middle name.
You'd think so, I agree, but it still leaves room for some other options too. For instance, maybe the Easton-part just wasn't mentioned on Bret's website regarding his father, or maybe Easton is Bret's Mother's surname and he adopted it as an addition to his surname for whatever reason.

With Gabriel Garcia Marquez I just went to the library and found him under G instead of M. I found Ellis, quelle surprise, under E ... which didn't tell me anything.
