FWIW, I’d there’s a recipe with green bell peppers, I avoid it as it causes my reflux to kick up. Whereas, red, orange and yellow (sweet) are no problem.

I take recipes as recommendation, not something set in stone. We prefer red peppers to green so don't tend to use them anyway regardless of what the recipe says.

Over here we just call sweet peppers, peppers, chilles are chillies, they're not called peppers.

This is what we had, it's very good. I cut the beef in strips and did it under the grill along with the peppers because it's not barbecue weather.

A few years back I was in St Croix Virgin Islands, while driving around we found this little food stand on the side of the road, the only thing they had to eat was Ox Tail soup. I tried it for the first time and it wasn't bad.

I love oxtail soup and have made it. A deep, rich broth made with beef tail, not ox, of course. Absolutely delicious!

I quite liked it, I haven't had it since then, it's not really something you find on most menu's.
