Hello. Is the question "How many absents are there today?" correct? If not, what is the best way to ask it?

If you're asking how many people are absent you would phrase it like this:
"How many absentees are there today?"

If you just want to log the number, for instance when compiling a a record of attendance, you can ask it this way:
"How many absences are there today?"
