Which sentence is clearer and a better choice:

I couldn’t remember which items you said you were putting an order together for.
or
I couldn’t remember which items you said you were putting together an order for.

I'd say something like:

I couldn't remember which items you are going to order.

I think the key to clear communication is the fewer words, the better. Just say what you want to say. Extra words often confound the message.
