Gone are the days of being able to walk into a Rolex boutique with cash in hand and leaving with the model you want.

Should it be "wanted" instead?

Yeah, that's a bit of a conundrum because you are speaking of the past (Gone are the days) which would invoke the past tense of "want", but your sentence is not in the past tense (ie. leaving, not left)... so I would say either goes.
