I was just about to fall asleep then/when I heard the sound of thunder.
Is "just" redundant, and should "then" or "when" be used?

Using "just" is optkonal.
Use "when".

"Just" isn't redundant. It's the difference between saying "I was close to falling asleep," and "I was very close to falling asleep."
