I know, in general present tense verbs used with a singular subject end with "s". But I want to say, "We see his role shift from that of a prophet to that of a priest." Here, it does not sound right to say, "shifts." Any comments?

The verb "shift" is in the infinitive form (without the normal "to" modifier).

The infinitive form is used in object phrases after "see" or "hear".
