Is "breads" correct?

In regard to different kinds of bread, yes, although you can also use "bread." "Breads" is less ambiguous. Also, I'd say, "sandwiches are made with the bakery's breads and are available for carry-out only.

"Bread" is a mass noun. So why is "breads" used?

@tanguatlay,
You can use it to make it clear that you're referring to different kinds or types of bread, e.g. sliced white loaf, sliced whole wheat loaf, sliced rye loaf, etc.
