Who knows anymore? (With everyone saying "This is good for you./ This is bad for you.") I was eating some canned cream of mushroom soup one morning and some "expert" on TV said to stay away from canned food. What's up with that?
Really, I don't think your body knows or cares what time it is or what meal it is. We have all heard that fruits and vegetables are healthy, and the more, the better. Maybe you have heard that breakfast is the most important meal of the day. That is because "breakfast" means "to break fast". You have been fasting all night, and you need enough calories (fuel) to get your metabolism ( burning fuel for energy) going. Generally, vegetables are a low-calorie food, but enough of a variety of vegetables would provide enough calories and other nutrients to be a healthy breakfast.
It is early morning for me, and a baked potato sounds pretty good.
