Someone tells me something, and I say " Very interesting."

What I mean is I like what has been said and find it interesting.

Do native speakers interpret the phrase the same way as I do?

It still could be said with sarcasm giving it an ironic sentiment. But that's done with the tone of the speaker not the wording of the phrase.

Other than that, it means what you think it means.
