Should I keep or drop the commas around "José Mourinho" in the following two sentences?
1) Manchester United's manager, José Mourinho, said last night after the Barcelona game that.....
2) The Manchester United manager, José Mourinho, said last night after the Barcelona game that.....
Also, is it correct to place "last night" after "said"?

The fact that "José Mourinho" is a proper noun is irrelevant. The commas are around a nonessential dependent interrupting clause. They are necessary.
My pet, a dog, is precious to me.
Last night is correctly placed after "said".
