We can say "The kettle is boiling".

Can we say "The pot is boiling"?

Yes, both can be said, as both are containers in which water can be boiled.

There is an English idiom "keep the pot boiling", meaning "maintain the brisk momentum of something". Punkey was asking if you were thinking about that, or about literal pots with literally boiling contents.
