psallo, psallere 'to play on a stringed instrument, especially the cithara.' [my dictionary definition]
My therapist presented psallere to me. He gave a definition that included 'to pluck' [as in stringed instrument, not as in chicken.] He found this on internet, so i am somewhat doubtful.
However, in my dictionary below psallo, psallere, is the word psalterium, 'a stringed instrument, the psaltery.' If one plays a psaltery by plucking the strings, then psallere could mean "to pluck a gut string'.
To double check, could psallere be a suitable word for 'to pluck a tendon with one's thumb'?
