Is 'their' correct and'all' be within quotation marks?

Everyone was committed to the event in spite of their heavy personal schedules - work, family and other temple activities - and gave their “all” for the event.

1. Is their correct or should it be his or her?
2. Should all be within quotation marks?

You don't need the "their."

The "all" can be emphasized with quote marks.



Everyone was committed to the event in spite of heavy personal schedules - work, family and other temple activities - and gave their “all” to the event.

I just notice the word 'other' and wonder whether it is necessary. Can it be just 'and temple activities'?
Everyone was committed to the event in spite of heavy personal schedules - work, family and other temple activities - and gave their “all” to the event. (Here 'event' refers to the activity at the temple that they had attended.)

In BrE you can say gave their all, meaning made a maximum effort, and you can enclose all in quotes.
